Remember Chia Pets? Those seeds are packed with nutrients

Can you make pudding that has more Antioxidants than blueberries? Yes you can! If you use the little seed that most people think are only used to spread on clay "Chia Pets"!  We'll tell you just how powerful those seeds are, and then give you a tasty and nutritious pudding recipe.

How healthy and amazing are Chia Seeds?

  1. 1. 15x more Magnesium than broccoli
  2. 2. 30% more antioxidants then blueberries
  3. 3. 2x the calcium than a bannana
  4. 4. 6x more calcium than milk
  5. 5. Contains high amounts of rare powerful antioxidants
  6. 6. 6 times more iron than spinach

What is the best way to eat them?

You can certainly add chia seeds to your smoothies every morning. We've told you about other great items that can go in smoothies before. You can also make chia cereal instead of sugary cereals and oatmeal to start your morning.

But what about the pudding we mentioned? Well, here's how to make chocolate chia seed pudding. This is VERY SIMPLE: 

You want to mix one part chia seeds with two parts liquid (coconut milk is the best choice), stir, and wait. Over the course of thirty minutes to an hour, the chia seeds will gelatinize and the pudding will thicken up nicely. You can add whatever sweetener or spices you like to the mix: cinnamon is a lovely addition, and so is raw cacao powder. I always add a bit of stevia and a hint of vanilla to the mix, which is as follows:

(makes 3-4 servings)

  • 1 cup chia seeds
  • 2 cups coconut milk
  • 1 teaspoon vanilla extract
  • Tiny dash sea salt (if you want)
  • 1 tablespoon of raw cacao powder

Mix the ingredients together, and let them rest for a few moments. Stir the mix well with a fork every five minutes or so. At first, it’ll seem far too liquidy, but over the course of thirty minutes the chia seeds will plump up, till the pudding resembles tapioca pudding. Leave in refrigerator for 4 hours and enjoy. The more you make it, the more you will get better at the consistency.
